Question about Heart-Piercer Manticore

Hello!

It's really a small question. I'm still new to the whole site and commander deck making business, however, I'm slightly confused. When you eternalize Heart-Piercer Manticore and it becomes a white copy. Can Manticore still be used in a Black/Red EDH even though it's eternalize makes it white?

Yes this is legal. This is because there is not any white mana symbols on the card.

Non white decks are allowed to create white tokens via things like Sarpadian Empires, Vol. VII or embalm as long as they don't play white cards, or cards with white mana in their costs or rules text.

The rules for EDH/Commander state that a card's color identity is the combined colors of all symbols in it's mana cost and text box, as well as the little colored circle on the back of flip cards to the left of the type line. The manticore (and the other embalm/eternalize cards) simply make an off-color token and have no white color identity otherwise. Look at cards like Hunted Phantasm having a color identity and Acorn Catapult/Moonsilver Spear having colorless color identities.
