Center Soul can you use that on a blocking creature it would take no damage from a creature for the color you chose, right? This is primarily a protected from color question, please explain.

"Protection from X" protects from DEBT: Damage, Enchantment (Equipment, or any effect that "attaches"), Blocking, and Targeting.
This means that all damage from a source with quality X is prevented by "Protection from X." X can be a color, a creature type, or any number of other things.
