Power and Toughness are each equal to?

I'm having a hard time interpreting this rule as I've seen it used two different ways. The rule states "This creature's power and toughness are each equal to the number of Forest you control."

So if I control 8 Forest is the power and toughness 8/8 or 4/4?

My understanding is that they are EACH equal to the number of Forest so it should be 8/8, but I've seen people say the both have to add up to the total Forest .

You are correct. They are EACH equal to that total. There's really no room to misinterpret.

8 forests? Power is equal to forests (8), Toughness is equal to forests (8). 8/8 creature.

I don't know who is telling you that, but it's an 8/8. It pretty clearly says that each are equal to the number of forests, not some value of them added together.
