Obelisk of Urd when I cast this do I have to spicify cat soldier or can I just declare soldiers and it cover the whole of soldier type?

Every word in a creature's type line after the dash is treated as a separate subtype. So "soldier" is one type, "cat" is another type. When a card asks you to choose a creature type, you can only choose one such word and the effect will apply to all creatures with that word in their type line, regardless of what other types they have.

Basically, if you say "soldier", the effect will apply to all soldiers (human, cat or whatever).
