The specific rulings for this card say both:

"This does not check if the current target is legal. It just checks if the spell has a single target."

and

"If there is no other legal target for the spell, this does not change the target."

Let's say I have a Torpor Orb out and cast Hunted Horror. In response, my opponent casts Naturalize targeting my Torpor Orb. I could use Misdirection to turn Naturalize, I know; but,

could I use it on the triggered ability of Hunted Horror to give myself the tokens?

or

Is this not possible because I am not a legal "target opponent" for myself?

There's a problem with your example: Misdirection can only be used to change the target of spells, not abilities. Let's imagine we're talking about Willbender or something instead.

The key thing to know is that you can only use a target-changing effect to change the target to a legal one. That first ruling you found only means that it doesn't matter if the original target somehow happens to be illegal at the moment. You still have to choose a legal new target. You aren't your own opponent, so the target of Hunted Horror's ability can't be changed to you.

Whenever something asks you for a target, you must choose a legal target.
