mindswipe into a dissolve?

let say my oppenent wanted to cast Erase and had 8 mana open afterward and i cast a Mindswipe for 8 for the damage mainly and he taps all 8 am i able to futher respond to the erase with another counterspell like Cancel

Yes, you can add another instant to the stack before the Erase resolves.
