Does Lifelace's target have to be on the stack/field or can I target a card in my hand/deck/graveyard?

Lifelace's Oracle text is:

Target spell or permanent becomes green. (Mana symbols on that permanent remain unchanged.)

Lifelace can therefore only target a spell (which is a card or copy of a card on the stack) or a permanent (which is a card or token on the battlefield). You can't target anything in any other zone.

It has to be on the battlefield or on the stack. A card is only a spell if it is on the stack and only a permanent if it is on the battlefield. If a card is anywhere else it is just a card (although it still can have other characteristics just not spell/permanent).

If I cast it on say an Eldrazi will it revert to colorless once it leaves the field?

Yes. When an object changes zones, it becomes a new object with no relation to its previous iterations. In its new zone, it will no longer be affected by Lifelace's effect, and its color will only be determined by the colored mana symbols in its mana cost and any color indicators and characteristic-defining abilities it has.
