Is Lazav, Dimir Mastermind able to copy multiple creatures/their abilities at the same time, say your opponent mills multiple creatures, would Lazav be able to copy and hold all of the creature's abilities at the same time? -If they were to mill Darien, King of Kjeldor and Healer of the Pride would it have both abilities at the same time?

No, it would only have the abilities of whichever creature it copied last.
Lazav, Dimir Mastermind's copy ability triggers whenever your opponent puts a creature card into their graveyard from anywhere. If they mill Darien, King of Kjeldor and Healer of the Pride at the same time, that is two creature cards going to their graveyard, triggering Lazav twice. You will put these two triggers onto the stack in whichever order you choose, and they will resolve top-down.
Lazav's ability has it become a copy of the creature card that triggered it, with the stated exceptions. It does not say it keeps any other traits previously copied.
So if you stack your triggers so that the Darien copy resolves first and the Healer copy resolves second, Lazav will become a copy of Darien, and then become a copy of Healer (without the traits from Darien).
