Infect rulings

So Infect states that this creature deals damage to creatures in the form of -1/-1 counters, and to players in the form of poison counters. Does this mean that if I had an effect that said "this creature deals damage to target player/creature equal to its power", would infect still apply.

My concern for this is primarily that the rules text says deals damage to NOT deals combat damage to.

The reason for my concern is sort of a jund 'get a creature with infect really strong and throw it at the opponent'.

What I'm aiming for is Primordial Hydra get strong, and then an unsuspected Tainted Strike or get PHydra strong and then Fling so that the opponent doesn't know what's coming.

Yes, any type of damage the creature deals will count as infect damage. This includes combat damage, anything that fights, and things like Viridian Longbow. Note, however, that Flinging an infect creature wouldn't work, since Fling is doing the damage, not the creature

Yeah, no Fling. You need Soul's Fire.
In my Infect EDH, I've also gotten good mileage out of Chandra's Ignition, Mage Slayer, and Surestrike Trident.
