if I play Mana Maze, does it count itself for the color of the last played spell?

if I play Mana Maze, does it count itself for the color of the last played spell?

Also, if I have a Mana Maze in play, and during my enemies turn, he casts a spell. In response, i cast an instant that shares the same color countering that spell. Which spell is considered to be the last one casted? Would my instant have priority over his spell to the effects of Mana Maze, or I wouldn't be able to cast it?

1) Yes. Mana Maze's ability will check the color of the most recently cast spell, regardless of what that spell was or when it was cast; it isn't limited to spells cast after Mana Maze entered the battlefield.

2) You can't cast the spell, per Mana Maze's ability. Also, "priority" refers to a player's permission to cast a spell or activate an ability. Players have priority; spells and abilities do not have priority.
