Hushwing Gryff timing vs Chord of Calling

I have a Hushwing Gryff in my hand

My opponent casts Chord of Calling

Can I wait to see what creature he intends to take before flashing the gryff?

I'm assuming I can't :(

Well, you can, but it won't be in time to prevent the ETB trigger. You can either cast it in responsose to Chord of Calling (where you won't know yet which creature they will choose; or really, at this point, it would likely affect their choice), or simply when he passes priority to you, long after Chord of Calling will have resolved and the creature he chose was put on the battlefield. You could also cast it in response to an ETB ability, however at that point, the ability will already be on the stack, and Hushwing Gryff won't prevent the effect.
