i have an adapted Incubation Druid declared as blocker. i also have a Dawn of Hope on the field. can i tap druid to add mana and create new blockers with Dawn of Hope or will it remove druid from combat?

Declaring blockers all happen at the same time. So you are unable to declare a blocker, then cast a spell, then declare more blockers. Once a creature is declared as a blocker, tapping it will have no effect on it though.

You can't block with Incubation Druid and then tap it to cast Dawn of Hope to make more blockers.

You can block with Incubation Druid and then tap it to cast Commencement of Festivities .

And you can block with Incubation Druid and tap it to produce some of the mana for to activate Dawn of Hope (you'll need one more from somewhere) to create a Soldier token, but that Soldier will be unable to block this turn for the aforementioned reasons.
