How does deathtouch and polukranos work?

If I equip Gorgon's Head onto Polukranos, World Eater and then activate it's monstrosity to do 5 damage, and i assign one damage to each of five creatures my opponent controls, do they all die?

Yes. Any amount of deathtouch damage dealt to a creature is considered lethal. Note that those creatures will still deal damage to Polukranos, World Eater .

Thank you, i have read conflicting comments regarding deathtouch and whether or not it needs to be COMBAT damage for deathtouch to work.

No. Abilities that modify damage, such as deathtouch, lifelink, infect, and wither, apply to all damage dealt by the source. They aren't restricted to combat damage.

First strike and double strike, on the other hand, are restricted to combat damage because they're concerned with when combat damage is dealt.

so if i create a scenario where i make my Sedge Scorpion fight my opponents Fabled Hero , my scorpions deathtouch will trigger but the hero's double strike will not, resulting in both creatures dying?

Deathtouch is a static ability. It doesn't trigger. It just modifies the damage.

Other than that detail, you're correct. Neither first strike nor double strike affects fight damage. Fabled Hero will die because it was dealt damage by a source with deathtouch, and Sedge Scorpion will die because it was dealt damage greater than its toughness.

Sedge Scorpion would be the only one dying....since Fabled Hero has double strike hitting the scorpion and killing it before the scorpion can deal any damage to it; double strike guys...DOUBLE strike.
