How do hexproof combat tricks such as Ranger's Guile or Woodcutter's Grit work? Can I use them to save my Fugitive Wizard that was targeted by a Murder, for example?

Yes you can.
Right before a spell or ability starts resolving, the game checks to see if its targets are still legal. A spell/ability can't do anything to an illegal target and a spell/ability with no legal targets gets countered by the rules.
Giving a creature hexproof with one of your example effects will make it an illegal target for your opponent's Murder. The spell will get countered and your creature will be fine.
