Does having a flip creature count as public knowledge? Example: If I have Accursed Witch Flip on the field, is my opponent allowed to look at the flip side even though my creature has not flipped yet? I think the answer is yes but it's one of those questions that I may be wrong about.

The exception to this is Morph cards, which are sneaky deaky.

Yes. While a DFC is in a public zone or being revealed from a hidden zone, both faces are public information.
