Ensoul Artifact with thopta

So if i play Ensoul Artifact on Ornithopter , will it be a 5/7 flying, or a 5/5 no flying? And what about Ensoul Artifact on an equiptment like Gorgon's Head ?

he thopta will be a 5/5 WITH flying because the Ensoul Artifact overrides the toughness and changes nothing else
the Gorgon's Head only gives an equipped creature deathtouch and an animated artifact (or echantment) cannot be attached to another permanent

Ensoul Artifact changes the base P/T of Ornithopter , so it will become a 5/5 creature that keeps all of Ornithopter 's abilities, so it will have flying.
If you cast Ensoul Artifact on an equipment, the creature you make will not have the ability that the equipment could grant (deathtouch in the case of Gorgon's Head ). You will not be able to equip it to itself either, but because it is still an equipment you could equip it to another creature (the equipped creature would not get a +5/+5 bonus though).

@TheHroth: Creatures can't be attached to other objects. You can't equip an Ensouled equipment to anything.

A card does what it says, no more and no less. Ensoul Artifact on an Ornithopter will result in a 5/5 with flying, and on a Gorgon's Head will result in a 5/5 with some irrelevant abilities (a creature can't be attached to anything).
