Endrek Sahr, Master Breeder: responding to 2nd trigger.

Say I have Endrek Sahr, Master Breeder on the battlefield and also a sac outlet like Phyrexian Altar. Then, I cast a seven CMC creature spell, say a Sheoldred, Whispering One.
As I'm casting, the first ability that reads "Whenever you cast a creature spell, create X 1/1 black Thrull creature tokens, where X is that spell's converted mana cost." triggers and I create seven 1/1 black Thrull tokens.
Then, the second ability that reads "When you control seven or more Thrulls, sacrifice Endrek Sahr, Master Breeder." triggers as well.
My question is this: Can I Sacrifice Thrulls to Phyrexian Altar (as paying for the cost of its activated ability) with the second trigger still on the stack so when it tries to resolve, it will check and there should be less than seven Thrulls, so the triggered ability is countered and I get to keep Endrek on the battlefield?

No.
It's always good to check Gatherer before asking a question, since sometimes it will have the answer for your question.
9/25/2006 When the second ability resolves, Endrek Sahr will be sacrificed regardless of how many Thrulls you control at that time, even if its less than seven.
If it were to work the way you wanted to, it would need an intervening "if" clause that would cause the number to be checked both when it triggers and when it resolves. Since it doesn't, the ability will trigger and will have to be removed via cards like Stifle or preventing the sacrifice via cards like Assault Suit
