enchanting my stolen enchanted permanent with another thievery enchantment

So, let’s say I have a creature that someone enchants with Mind Control and takes control. Then on my turn I enchant that creature with In Bolas's Clutches or Lay Claim or something along those lines. Would I then take control of it? Or would I have to destroy the enchantment to regain control?

You would control the enchanted permanent due to the layer system.

Control-changing effects occur in layer three, and the most recent control-changing effect takes precedent.

So, in this case, you control the creature originally. They enchant it with Mind Control , and their control-changing effect is at the top of layer three, so it takes precedence and they control the creature. You put a control-changing effect with In Bolas's Clutches . Now your control-changing effect is at the top, so you control the creature.
