Doubt about Join Shields

My question is, can i use Join Shields to untap my creatures after my opponent declares an attack, and make those creatures block his creature or not?

Yep, this works.

You can cast an instant spell at any time you have priority. The attack phase is broken up into five steps (sometimes six or seven, if the Combat Damage step repeats due to double/first/last/triple strike). The relevant steps to your question are the Declare Attackers Step and Declare Blockers Step.

The declare attackers step is defined by Rule 508. We'll skip most of the rules and go right to Rule 508.2--which reads "the active player gets priority."

So, your opponent declares their attackers, and then gets priority. They can cast any instant spells or activate any abilities they want at this time, though it's generally not a good idea for them to do so, as blockers have not been declared, so its unclear what the matchups are going to be.

Then your opponent will pass priority to you, allowing you to activate any abilities or cast any instant spells.

At this time, you should cast Join Shields, untapping your creatures and giving them indestructible.

Once the stack resolves and both players pass priority, you will move onto the Declare Blockers Step. As this occurs after your Join Shields has resolved, your creatures will have untapped, and you will be free to use them for blocking.
