No. Abilities that trigger when a creature attacks trigger when that creature is declared as an attacker. Once an ability is on the stack, it exists independently of its source; you don't counter an ability by removing the source, and you can't retroactively "untrigger" an ability.

Further, Maze of Ith doesn't even remove the target creature from combat. The attacking creature is still an attacking creature.

Because the ability prevents combat damage that would be dealt to and by that creature, you can use this ability before combat damage is dealt and prevent "whenever X deals combat damage" abilities from triggering, but that's about it.
