Does double-strike affect "when this creature deals damage to target player?"

If I had a card like Cabal Executioner, and gave it double-strike with something like Assault Strobe- If it did direct damage to a player, would that player be forced to sacrifice two creatures since double-strike would make Cabal Executioner deal damage twice?

I assume you mean "additional instances of damage."

Yes it happens each time the trigger condition is met. If you somehow deal additional triggers, such as extra combat steps, those work too. Rafiq of the Many commander decks abuse the hell out of this more often than not.
