Do cards like Angel of Jubilation and Spear of Heliod give creatures +1/+1 counters or just +1/+1?

In my mono white deck I use a combination of cards like Angel of Jubilation and Spear of Heliod to interact with cards like Abzan Falconer and Ainok Bond-Kin to give creatures I control first strike and flying, but I was just thinking the Spear just reads that creatures get +1/+1, not a +1/+1 counter, where cards like Gideon's Avenger specifically mention counters. So is there a difference between getting +1/+1 and getting a +1/+1 counter?

Yes, it is different and no, these two do not interact at all with the second abilities of Falconer and Bond-kin.

A counter is something that is meant to persist, whether it is a loyalty counter, a +1/+1 counter or a filibuster counter. A +X/+X bonus is related to effects that have a set duration like Giant Growth's duration until end of turn or Angel of Jubilation's duration of "while this is on the battlefield".
