Dimir Doppelganger Question

I am sure that this isn't how it works, but when you use Dimir Doppelganger to become a copy of the creature, is it still a shapeshifter?

No. It would have to specify that it is still a shapeshifter.

That's that I thought! I was hoping it would be the shapeshifter still since it's in my Sliver EDH deck. But I can still fetch it and play it when I need to.

Why would it still being a shapeshifter be relevant to a sliver deck?

It's hard to tell whether this is part of what's going on, but just in case: being a shapeshifter is not the same as having the Changeling ability. Dimir Doppelganger is just a shapeshifter, not a sliver or anything else. Mothdust Changeling and similar cards only count as all creature types because they specifically have the Changeling ability.
