Out of curiosity, is this a thing? Do the copies created by Deceiver of Form actually take the name Shadowborn Apostle?

If the top card of your library at that time is a Shadowborn Apostle, you can have creatures become copies of it. Unless otherwise stated, copies copy all copyable values, which include the name (as well as the relevant ability).
