convoke and heroic

Akroan Crusader and Stoke the Flames if i use the convoke mechanic to tap the crusader do i get a token for targeting him through convoke? or does it never target per-say

A spell or ability only targets if it specifically uses the word "target" in its text.
Convoke doesn't target anything. It can't trigger heroic.

Note though, that another Theros Block mechanic - Inspired - does work very well with convoke.

Bob Jr (Pain Seer) for one works pretty well with Convoke. using him and maybe like King Macar, the Gold-Cursed to Stoke one of their threats would be pretty good for you. draw an extra card and exile another of their threats on your upkeep.

Snarky answer: only if you choose him as the target of Stoke the Flames (most likely killing him).
Actual answer: no; using a creature to convoke a spell does not "target" that creature in any way.
