Combat instants tapping sacrifice question

My friend attacks with a 6/6 I declare to block with Emrakul's Evangel then cast an instant to boost him to a 9/8 opponent casts an instant to boost his to 8/8 indestructible.. My question is can I then after his instant tap my creature and sacrifice him for his effect

Yes, you may sacrifice your creature. Provided that your opponent has no response, your sacrifice will resolve, putting your blocker into the graveyard and a token will be created, your opponent's instant will resolve, your instant will fizzle due to lack of a target, and the attacking creature will remain blocked and neither deal nor be dealt damage.

Slight correction: The sacrifice can and will happen regardless unless something is specifically stopping you from sacrificing things, for example, if someone has an Angel of Jubilation on the field. The sacrifice is part of the cost and can't be responded to.

What can be responded to is the effect of the ability.
