Clarifications about Oak Street Innkeeper

So Oak Street Innkeeper gives all my tapped creatures Hexproof as long as it's not my turn, fine. I have two questions:

1) Say I have a creature untapped and my opponent attempts to cast a spell on that creature during their turn, (assuming the creature has a tap ability or that I can otherwise tap it somehow) can I tap the creature in response to give it Hexproof?

2) If it is my turn and my opponent casts a spell on one of my creatures can I end my turn in response to give my creature Hexproof? (if so, would I have to tap it before or after I end my turn or would it have to already be tapped before I ended my turn?)

1) Yes. Oak Street Innkeeper 's ability begins to apply as soon as the creature is tapped, so your opponent's spell will fizzle.

2) No. You can't arbitrarily end the turn. In order to progress to the next step or phase, players need to pass succession over an empty stack. You would need to use something like Sundial of the Infinite 's ability to achieve the effect you describe, but "end the turn" effects always exile all objects from the stack anyway, so whatever spell your opponent cast would be irrelevant.

Note that you must have a spell or ability that causes the creature to be tapped (as part of the effect or the cost) for #1. You cannot simply choose to tap a creature at will.
