Casting an enchantment on a God

Let's say I have Nylea, God of the Hunt on the field but I'm only at 4 devotion, 1 shy of her being a creature.

Can I play Unflinching Courage and enchant Nylea, since the act of playing the enchantment generates the fifth devotion needed to make Nylea a creature and thus a legal target?

My guess would be that you cannot, since the target legality is checked at the time of casting, so the enchantment has not yet resolved and become a permanent capable of generating devotion.

I thought it'd be worth checking, though.

Also, if Nylea were legally enchanted with Unflinching Courage at some point and then lost her creature status, then the Courage, which stipulates "enchanted creature", would then fall off as a state-based action, right?

Your guesses are right. The target of an Aura spell is chosen as you cast it (like any other targeted spell), meaning it's not yet on the battlefield. Also, an Aura can only be attached to a legal object as defined by its "Enchant NN" ability. If an Aura with "Enchant creature" is attached to something that somehow becomes a non-creature then it will be come unattached.
