Can you block a Creature with Walking Ballista, then remove counters to kill a different Creature, before damage is assigned?

If you can, is the first creature still blocked?

Yes, once a block is declared in thew beginning of the declare blockers step, regardless of what happens later with the blocking creature, the attacker will remain blocked.

The only case I can think of where it can matter whether a blocker has been removed from play or not is trample - if the attacking creature has trample and was blocked by creature that was later removed from combat, the attacker can deal all its damage to the defending player. This interaction is exemplified by the card Ride Down .
