Can one individual creature block creatures on different attacking steps?

In my deck I'm getting triGgeRred EDH ⪢PRIMER⪡ I use Godo, Bandit Warlord and Helm of the Host to combo off with infinite attack steps. Can my opponent repeatedly block with the same creature since they are new combat steps, or can one creature only block once per turn even with additional combat steps?

The same creature can block multiple times in a turn if there are multiple combat phases. The rules for assigning blockers don't consider any other blocking decisions that may have happened earlier in the turn during a different combat phase.

Your opponent can block with the same creature each combat step, but damage marked on that creature will cumulate because damage isn't removed until the end of the turn. The blocking creature can even block different creatures each combat step. The combat phase is broken into 5 sections:

506.1. The combat phase has five steps, which proceed in order: beginning of combat, declare attackers, declare blockers (first strike damage, normal damage), combat damage, and end of combat.

Each new combat phase resets this process, so the attacking player can choose different creatures to attack, the defending player can choose which creatures they will use to block, and those creature can even block different attackers than they blocked the first time. However, unless the blocking creature has indestructible, it will eventually die because damage is marked until the end of turn, so the damage accumulated from each combat phase will carry into the next combat phase.
