Can mimeoplasm be countered

If mimneoplasm be countered if he copies a creature that says he cannot be countered in the ability
It's only after The Mimeoplasm is successfully cast and enters the battlefield that it exiles the creatures; so yes it can absolutely be Counterspelled

The creatures are actually exiled before he enters the battlefield. He has a replacement effect that modifies how he enters, so it happens as he resolves off the stack.

You only exile the creature cards and start doing the other stuff after The Mimeoplasm starts to resolve. At the time your opponents get to decide whether or not to counter it, you haven't even chosen which creature cards to exile yet. It's just a regular old Mimeoplasm.
It's interesting to note that because it isn't time to choose the creature cards yet, you don't have to tell your opponents what you plan on doing while they're trying to make a decision on whether or not to counter it.
