Can I equip only as a sorcery?

e.g. if I have Hero's Blade on the field, can I equip it to, say, Bloodsoaked Champion at any time, or only during my Main Phases?

Equip abilities may only be activated "any time you could cast a sorcery." This phrase is Magic shorthand for "during your main phase while the stack is empty and you have priority."

Only during main phase when the stack is empty (aka as a sorcery).

502.33a Equip is an activated ability of artifact Equipment cards. Equip [cost] means [Cost]: Attach this Equipment to target creature you control. Activate this ability only any time you could play a sorcery.

There are exceptions (Cranial Plating's ability is the first one that leaps to mind), but when they happen, it isn't through the use of the Equip keyword ability.
