If I attack with 2 creatures and both are enchanted with Aqueous Form do I scry 2 or do I scry 1 twice

Each trigger resolves individually. So you scry 1, then scry 1.

You scry 1 twice.
Each Aqueous Form has its own triggered ability. The abilities are independent of one another and resolve separately. Additionally, you can never combine multiple instances of scry into one "scry [sum]" ability.
