If one were to equip [Puresight Merrow]] with Paradise Mantle is there a win scenario out there or a way to change the target from me to an opponent? I was thinking using Laboratory Maniac for the win.

A spell or ability only has targets if it specifically uses the word "target" somewhere in the text (or in the full rules text for a keyword ability). Puresight Merrow 's ability doesn't have any targets, so it can't be "re-targeted" to another player.

The combo you suggest to exile your library works just fine. The only limit to how many times you're able to activate a given ability is how many times you're able to pay the cost (or if it specifically puts a limit on itself).

just use Labratory Maniac like you said, do the infinite loop of exile your library until you see a one mana draw card like Quicken draw it, then continue to exile your deck until you get to 0 cards in your library then tap the creature for one blue mana with Paradise Mantle and draw your self into madness :D. Of course this will only really work if you have Labratory Maniac out but if youre exile cards till you get what you want that shouldn't be too hard.

You can play Donate + Twincast and give those permanents to opponent, then just Mind Slaver them.
