I'm looking at Aquastrand Spider and I like his effect but everyone says this card is overrated. Can I use his effect on my opponents turn? I can understand he isn't as useful if you can't but, if you couldn't, wouldn't it be pointless anyway?

Except graft creatures turn Cytoshape into a kill spell for most other creatures!

Thanks! I was thinking of using Aquastrand Spider in a simic EDH deck so I could use larger creatures without reach to take out fliers. Is there a better way to remove a lot of fliers at once?

Cards like Skyreaping or Plummet will do the trick. I know that there's quite a couple of cards that tae out multiple flyers, but I can't think of many more right now.
A quick Gatherer search will get teh job done though.

Should I add stuff to help gain life? Windstorm and Hurricane are great cards but don't their effects hit me for damage too?

In EDH to kill fliers I reccomend Silklash Spider . Yes it needs mana but it's reusable. And is a decent body in its own right

The question is, is your deck synergizing with +1/+1 counters? If its anyone like Vorel of the Hull Clade , Master Biomancer , Prime Speaker Zegana , Experiment Kraj , then Aquastrand Spider is pretty decent. If it isn't and you're using it to simply just give 1 other creature flying after using graft then what people are suggesting above is better.

Yep, you can activate that on your opponent's turn.
It's a neat ability, but Deadly Recluse is almost strictly better.
