ok, so my gf has been wanting to learn how to play magic for awhile now, but i don't have any simple decks for her to use. I'm needing some help on what simple cards their are to put in a mono green deck. I was thinking of using some elves such as Elvish Mystic, Llanowar Elves, and other stuff, but I don't know of anything else.

Anything is helpful, I'm just needing to make it simple until she learns the rules.

If I were you I'd start by building a simplified casual Mono-green devotion style deck and then add in the the more complex cards as she learns the rules. Stuff like Kalonian Tusker and Garruk's Companion in the 2 mana slot and Leatherback Baloth at 3. Then as she gets more used to it you can introduce cool cards with a little more complexity like Primalcrux and then cry that you gave her a way to swing for 15+ trample on turn 4.

If it's just a simple mono green deck for teaching the rules I would suggest either a mono green ramp deck with cards such as Arbor Elf, Llanowar Elves, Elvish Mystic, Priest of Titania etc. into large value creatures such as Primordial Hydra, Elderscale Wurm, Plated Slagwurm, Wolfbriar Elemental, etc. Or if you want a strong simple mono green deck that sees some play in modern I would recommend mono green stompy which just plays value creatures such as Experiment One, Dryad Militant, Kalonian Tusker, Leatherback Baloth, etc. and pump spells such as Giant Growth, Vines of Vastwood, etc.

do you think it'd be worth also putting in an Essence Warden as well? or maybe a Joraga Treespeaker?

So, I'm guessing a modern and budget monogreen deck? with a bit of everything (sorcery, instant, enchantment, artifact...) and several simple keywords (trample, flying, etc) so she can learn how everything works.

at the moment, i have a mono green commander deck that i'm going to be taking cards out of to use. it's an elf deck so i have many mana producing elves in there and some big stompy type of creatures in it.

It would be nice she learns to ramp properly. Mana dorks like Llanowar Elves allow 3-mana on turn two: what would she like to cast on turn two? Probably Cultivate to enable 5-mana on turn three AND thin the deck a bit? Or just drop some mean three drop like Leatherback Baloth? It's different from casting something like Vine Trellis on turn two, enabling 4-mana on turn three for some nasty 4-drop or maybe a Collected Company.

Learning to ramp will open her a world of new possibilities once she begins to add more colors to base-green!

Also I reccommend Wall of Blossoms to teach her the value of card advantage and Viridian Zealot for an utility creature tah can be both offensive as well as a quick solution against lots of stuff. Also Revive is great for monogreen recursion, which is another of the color's strengths.

Later introduce her to Green Sun's Zenith and she'll be a very happy green mage!
