Some time ago, I created a creature name Alejandro Alvarez, archmage adept, a creature with a focus on instants and sorceries, and I now have created a new version of the same character, as seen, below:

This incarnation of Alejandro Alvarez is modeled after Riku of Two Reflections, but without the color green and the emphasis on creatures, instead with an even greater focus on instants and sorceries. Very few creatures have protection from instants and sorceries, so I gave that to Alejandro, which, combined with the prowess mechanic, emphasizes his skill with those spells.

What does everyone else say about this card? How well did I do with it?

Protection from instants and sorceries prevents you from getting maximum value from him, since you can't buff him with things like Assault Strobe, Blazing Shoal, Borrowed Hostility, and like 90% of red's other instants. Hexproof is probably a better choice.

The pro- instants and sorceries fits the theme tho

It's asking to be abused with the second ability. You could combo into infinite mana, then infinitely cast one or more spells. You can fix that by saying "Whenever you cast an instant or sorcery spell from your hand" or "can only be activated once per turn"

I would maybe build an infinite turns deck around this guy or something lol

greyninja, Riku does not have such a restriction upon his ability, so why should Alejandro?

It's not a question of should or shouldn't; it just depends on what angle you're going for :)

Having infinite mana with the "Whenever you cast an instant or sorcery spell, you may pay . If you do, copy that spell, and you may choose new targets for the copy" ability would not allow you to copy it infinite times. That is basically the same wording as Riku, and on the Gatherer page for it, the rulings section says "Each time the first ability triggers, you can pay only one time to get one copy of the spell". And since the copy wasn't cast, you can't chain it off of that.
