Mono White General

Is Avacyn, Guardian Angel a really really really good mono white General or am I just crazy?
I would put her in a general white deck with all stars no real theme
if you don't mind the hate Iona, Shield of Emeria is decent, from what I have heard.

I feel like Eight-and-a-Half-Tails is just strictly better. It isn't a beatstick, but protection is much better than just damage prevention

If you use her she would probably be a lot like Avacyn, Angel of Hope in that you would need a ton of ramp to run her. I'd say go for it!
I do run a mono-white EDH deck with Mikaeus, the Lunarch . I use him mostly because of the nostalgia of that general being my first try at EDH ever.

Or you could just be a badass and run Elesh Norn, Grand Cenobite as your general because awesomeness

Avacyn, Guardian Angel looks a lot more fair for casual play than Avacyn, Angel of Hope , but she will probably be vulnerable to removal. If you want to be "competitive" you might rather use the older Avacyn. Or; you could have both, and choose which one is at the helm and which is in the deck depending on the crowd or your mood! You can have both in play at once since the names are different.
You might want stuff like Swiftfoot Boots and Mask of Avacyn (does she ever actually wear that thing?).
I have Kemba, Rha Regent as my EDH monowhite commander, but the deck is so heavily colorless, probably not half the spells are actually white. The deck's here if you're curious, it does alright but is so commander-centric and reliant on Extraplanar Lens or Caged Sun getting in early it's a bit unreliable overall.
It inspires so many cat puns though!
