Never actually liked chili - probably the peppers. I've always loved grilled chicken though. Ever make it? I usually put black pepper on it so it has some semblance of a taste, but I've been experimenting with some spices lately. Paprika, cayenne, ground red pepper, and some other shit I randomly found in my cupboard.

Didn't take a picture, but I made myself a nice pepper steak the other day with some potatoes roasted with garlic and rosemary. Delicious.

The secret to making grilled chicken bomb is to brine it first. 1/2 cup sugar 1/2 cup salt to a gallon or two of water and you'll be in business.

Sounds delicious. When I ate meat I loved steak au poivre. The trick on that is to simmer the peppercorns in oil for an hour. Makes them soft and the oil transfers the flavor to the steak quite well.

Last summer my family purchased a smoker, so I'll be doing some experimentation with different woods, rubs, and meats to see what we like the most. Keeping the temperature constant gets to be rather tedious though.

Had a few friends over and made a 12lb brisket and a couple pounds of chicken... My parents were disgusted when five of us finished it that night.

I lied. They look deadly (tree nut allergy). Replace em' with peanuts and then I'll say they look good. Although peanuts in cookies sounds weird... Maybe just peanut butter something.

I actually made half without nuts. I'm surrounded by finicky eaters so most meals at my house are 50/50.

I spent the afternoon smoking chicken breasts for dinner. Made a salad of cucumber, tomato, avocado, red/orange pepper, onion, and cilantro in a little lemon juice and pepper, along with some good ole' corn on the cob (although the corn was mediocre... not the season yet).

@Tibbles: You should make some homemade salsa next time. It's super easy if you have a food processor.

Roast a white onion, 6-8 plum tomatoes, a bell pepper, and some jalapenos in the oven at 350 for 20-30 minutes all halved and lightly coated in olive oil, salt, and pepper. Blend afterward and add lime juice and cilantro.

Black beans, corn, onion, cilantro, and lime juice also make a fine side/topping.

@ducttapedeckbox: Ever try grilling the corn and rolling it in butter, paprika, and some oaxaca cheese?

@ducttapedeckbox: I used to make a pico de gallo instead, but it's just a ton of effort for a similar product with a little more visual flair.

Ooh no I did not, Epochalyptik. I have not tried that with corn, but it sounds interesting. I never thought to put cheese on corn. I have relatives that live near a small farm, so in the Fall they bring fresh, locally grown corn. It's almost a sin to not eat it plain. I can't say the same for the grocery store chain corn though.

Same with the salsa. I've gotten to the point of just throwing it all in the food processor and pulsing it a few times. The amount of work required for a minute difference isn't worth it for me.

Turkey meatballs were a success. I might try varying the veg a bit next time.

@ducttapedeckbox: I think the butter, paprika, and cheese corn is typically called "Mexican corn." As you implied, it's a great way to breathe life into grocery store corn. I happen to have the benefit of living near four or five large cornfields, and the local farmers markets are always well stocked.

If you use oaxaca or another mild white cheese, it pairs brilliantly with some grilled chicken fajitas. It's also good on its own. I did once have it with South African eggs for brunch, and it was glorious. I'll have to do that again next weekend or something.

Just put olive oil and dry rub on it. Salt, pepper, white pepper, onion powder, garlic powder, paprika, cayenne pepper, small amount of sugar.

I'm thinking about winging some kind of fish stew tomorrow morning. Maybe start with a mirepoix and some garlic, then add in tomatoes, white wine, and tilapia. Thyme, tarragon. Maybe some scallops to go with the tilapia.

Mirepoix is usually diced onion, celery, and carrot. It's a common base for soups, stews, stocks, and many other dishes.

I've also been doing a sausage and lentil soup recently. Sweat a mirepoix with some garlic for about 5-8 minutes, then dump in some chicken stock, lentils, thyme, rosemary, and sage. Bring to the boil and let simmer until the lentils are cooked, then add some kale and sausage, cook for another 10 minutes, and serve.

I think most people use kielbasa or a similar sausage, but I've been using some Venetian salami that I color in the saucepan and remove before starting the mirepoix.

I generally make a soup, stew, or chili on Sunday to eat throughout the week; it's not nearly as much work when you consider how many days you get out of it.

I'll also sometimes invest some time in making homemade tagliatelle or ravioli.

I'm not yet advanced enough to be doing restaurant quality dishes for most meals, but I do love to cook. Cooking isn't trouble if you enjoy it.

I agree with Epochalyptik about the stews and soup's. It's actually super simple. Cook and prep usually takes an hour total and then you let it simmer. Eat what you want for that meal, and refrigerate it.

And that sausage and lentil soup sounds good, might try it out this week.

And APPLE01DOJ... that gumbo looks awesome. Looks like it would cause acid reflux with all that butter, but it does look awesome.

No butter in it beyond the rue, that's Parmesan you see. They loved it but I didn't eat it, was still a vegetarian at that point.

I can see that it's parmesan, i'm just looking at the broth. You can see it's kinda oily, just assumed it was butter.
