The alternative characteristics on a flip card can only apply while the card is on the battlefield and flipped. In your example Mairsil, the Pretender will only have the activated abilities of the "normal" half of the card. Any permanent can gain the "flipped" status if something causes that to happen, but it won't really do anything if the card doesn't have specific alternative characteristics for being flipped.
Similarly, the characteristics on the back face of the double-faced card can only apply while the card is on the battlefield and transformed. In your example Mairsil will only have the activated abilities of the front face of the card. Only double-faced cards can actually transform.
Note that Student of Elements and Mondronen Shaman Flip don't actually have any activated abilities, which are always written out as "(cost) : (effect)". Jushi Apprentice and Wolfbitten Captive are better examples.

Matt_The_OGRE, in this case I don't know if he would have thought to, not knowing I was going for lab man win. If he did though, in response I could have targeted him with Tomoya the Revealer, have him draw 39 cards and play defense a few turns. We were drawing 6 cards a turn at this point in the game and he would have likely milled out in a few turns.

Some advice. Courtesy of Kami of the Rising Tides.
When you're down to your last opponent with thirty-nine cards in hand with a Tomoya the Revealer online and a library smaller than your hand, and you're opponent has a 3/3 Marath, Will of the Wild, don't play Laboratory Maniac, and then activate Tomoya the Revealer . First cast Polymorphist's Jest on Marath. Then do your thing.

Etherium-Horn Sorcerer, Ancestral Vision, Recurring Insight, Possibility Storm, Chasm Skulker, Master the Way, Jushi Apprentice//Tomoya the Revealer all have pretty great synergy with what you have going on.
