When an opponent plays a creature spell, if Opal Guardian is an enchantment, Opal Guardian becomes a 3/4 Gargoyle creature with flying and protection from red.

Blue has a lot of Propaganda or Mystic Remora type effects, which give you cards when opponents do stuff. These are good. You may want to just pick good offensive enchantments.
Black has a lot of torture-type enchantments. Do a gatherer search for black enchantments and you will find a lot of good ones. I dare you to use Lich ;)
Red enchantments often have a lot to do with doubling the damage you do, e.g. Gratuitous Violence. There is a red/white enchantment combo using Sulfuric Vortex and Transcendence, both of which have high devotion.
If you're just going for high devotion, then try Opal Guardian.
You can always do a combo using Traumatize or Morality Shift and white's enchantment reanimation.

I'm testing following cards atm:
2 Mana Slot: Eight-and-a-Half-Tails, Auriok Champion, Favor of the Mighty (sideboard option against control lol)
3 Mana Slot: Opal-Eye, Konda's Yojimbo, Brimaz, King of Oreskos, Boros Reckoner, Opal Guardian, Descendant of Kiyomaro, Eidolon of Rhetoric, Mangara of Corondor
Others: A second Cavern of Souls for a Human/Angels only deck

If I cast a 4cmc creature I expect 4-power so those two seem a bit weak.
Paladin en-Vec is ok but a bit low on power and not the most reliable evasion.
I think that trasforming Opal Guardian should be relatively easy against most decks and getting an evasive 3-power beater which can also block rather well with 4-toughness seems rather good.
Should I replace Genju of the Spires with It ?
Or is Genju of the Fields the better choice ?
It has less power but is a better blocker that can gain life.
Would Haunted Plate Mail be a good replacement for Brion Stoutarm ?
(or maybe Ojutai Exemplars/Thunderbreak Regent is the better option ?)
Another option can be Bonehoard which can get rather big with all my removal and board-wipes.Is it better than the above mentioned 4-drops ?

Would Opal Guardian or Haunted Plate Mail be good in this deck as resilient threats/blockers ?

Do you want to keep it on a budget or not? First thing you want to do is dropping 4 cards. A 60 card deck is better because you have a lesser amount of cards so you have a higher chance of drawing the cards you really need. Gelid Shackles, Opal Guardian, Temporal Isolation, Coordinated Barrage and Sunlance can all be replaced, they are not that good, especially in modern...
For removal, the best option is 3-4x Path to Exile. You can add Valorous Stance because it is removal and protection against removal in one, so definitely play it like 2x. A budget option but still really good is Celestial Flare. Because it makes your opponent sacrifice one of his creatures, and does not target a creature, it can even take down an Emrakul, the Aeons Torn.
You cant miss Brave the Elements in a mono-white deck, because it protects your creature but can also be a finsher because protection makes sort of unblockable too!
Ballyrush Banneret, Preeminent Captain and Figure of Destiny are great creatures to play too, consider those.
