The most straightforward way of thinking about Mannichi is that you apply its P/T switching ability last.
P/T is determined in Layer 7, which has a number of sublayers. We have to apply all the effects from one sublayer before moving to the next one. Luckily, Layer 7 is the easiest Layer to understand. In the first sublayer, we consider characteristic-defining abilities (CDAs), like that of Tarmagoyf. In the next sublayer, we consider P/T setting effects, like that of Scale Up. In the third sublayer, we consider all buff/debuff effects, like your Slagwurm Armor as well as counters. In the fourth and final sublayer, we consider P/T switching effects.
Let's run through an example. Let's say your Ancient Crab is out with 2 +1/+1 counters, has Slagwurm Armor equip, and is affected by Mannichi. Nothing happens in the first two sublayers. In the third sublayer, there are 3 effects to apply. We apply all of these effects in "timestamp" (roughly chronological) order. Let's say the counters happened first. So, the Crab will go from being a 1/5 to a 3/7 to a 3/13. In the last sublayer, you switch the power and toughness, and the Crab becomes a 13/3. Should you unequip the Armor, the Crab will be a 7/3.

The idea looks fun but I would redesign this into a Mill deck. You can still use the crabs you have, plus you can use Horseshoe Crab and Ancient Crab in combo with Phenax, God of Deception. Take advantage of those crabs' high toughness.
Fraying Sanity helps you win the match much faster. Visions of Beyond is a cheap hand-refuel card if you follow the Mill idea.
After that you need spells to answer your enemy's moves. Counterspells and removal will help you survive. There's also a lot of non-creature spells that Mill, like Glimpse the Unthinkable.
Other than all of this, if you continue to use Iceberg Cancrix switch your lands to Snow-Covered Island, Snow-Covered Forest or Snow-Covered Swamp

Take Palladium Myr and Selesnya Sanctuary out of sideboard, they are not legal in standard.
-2 Solemnity and -4 Trial of Knowledge, +2 Cast Out and +4 Ixalan's Binding.
-4 Ancient Crab and -4 Shore Keeper +4 Glory-Bound Initiate and +4 Cloudblazer.
-2 Supreme Will and -2 Demystify, +2 Authority of the Consuls and +2 Disallow

Irrigated Farmland is better than Meandering River.
If you can afford four of each that is better still. Take out two more of each Island and Plains.
This deck might win one or two games at FNM. A more competitive option is to buy a Planeswalker Deck and tweak it.

Hey guys - just entered a draft league. They let us pick up 4 packs to start (2 ANK, 2 HOU) and build 30 card decks from there. I think I got the short end of the pulls. Especially when I look at the awesome (frustratingly so) pulls that my GF got, who is even more of a newbie to the game. Anyway, this is what I put together:

I'm wondering if I shouldn't have featured Red in the deck, maybe just cut my losses and went RG to keep it simple. Can anyone help me out? It's fairly casual, but I don't really want to get my head caved in for the next two months of MtG.Thanks in advance for any help you can offer!

You should put in Propaganda to fend off early attacks. Caged Sun is a good alternative to Gauntlet of Power. Lightning Greaves and Cephalid Illusionist can also mill out your whole library as long as you have another creature. Also is Ancient Crab necessary? (Hint: No it's not).
